A Slice of Fall: My Favorite Pecan Pie Recipe

There’s something about fall in Texas that makes me crave all things cozy — crisp mornings, warm drinks, and of course, pecan pie. It’s that classic Southern dessert that never fails to bring a little comfort and a lot of sweetness to the table.

Whether you’re baking for Friendsgiving, Thanksgiving, or just because, this is my go-to pecan pie recipe — simple, rich, and full of that toasty, buttery flavor we all love. Bonus points if you top it with a big scoop of Blue Bell vanilla.


Ingredients:

  • 1 unbaked 9-inch pie crust (store-bought or homemade)

  • 1 cup light corn syrup

  • 1 cup granulated sugar

  • 3 large eggs

  • 2 tablespoons unsalted butter, melted

  • 1 teaspoon vanilla extract

  • 1 ½ cups pecan halves


Instructions:

  1. Preheat the oven to 350°F. Place your pie crust in a pie dish and crimp the edges.

  2. In a large bowl, whisk together the corn syrup, sugar, eggs, melted butter, and vanilla until smooth.

  3. Stir in the pecans until evenly coated.

  4. Pour the mixture into the pie crust and spread the pecans evenly.

  5. Bake for 50–60 minutes, or until the center is set and the top is golden brown. If the crust starts to brown too quickly, cover the edges with foil.

  6. Let the pie cool completely before serving — it’ll thicken beautifully as it rests.

Pro Tip:

If you want to take it up a notch, sprinkle a pinch of flaky sea salt on top right after baking. It perfectly balances out the sweetness and makes it taste fancy with zero extra effort.

I love slicing a warm piece, adding a scoop of vanilla ice cream, and enjoying it with a strong cup of coffee. Bonus if there’s a cozy candle burning nearby.
